Just another scones recipe which I’ve created! Sometimes you just need to improvise, and use the things you have at home! Originally I wanted to use the cranberries differently but they ended up in this recipe. In Austria you don’t get to buy fresh cranberries very often. More or less I’ve seen them like 3 times last year and only during the month of November! Which is very sad since I love to use fresh ones and not prefer the frozen.

Preheat the oven to 200°C and line baking pans with parchment paper In a small bowl whisk together the egg, buttermilk and vanilla extract. In a large bowl whisk together the flour, coconut sugar, baking powder, baking soda, cinnamon until combined. Add butter cubes, then rub in with your fingers until the mix looks like fine crumbs. You can also use a pastry knife. Add the cranberries (I’ve used fresh ones) and toss to evenly distribute. Once the scones have cooled for a few minutes, drizzle with the grapefruit glaze (2-3 tbsp grapefruit juice, 1 1/2 cup icing sugar depends on consistency, whisk together until smooth)Whole grain Cranberry Scones with grapefruit glaze
