This is a classic austrian soup recipe for creamy horseradish soup with homemade croutons. Its delicious, unique and creamy. A cozy comfort soup for cold days. First melt the butter in a medium pot over medium heat. When the butter is melted add the diced onion and garlic cloves and cook without colour for about 6-7 minutes or until translucent. Add the flour and mix it fast and thoroughly for 2-3 minutes with the butter and the vegatables. Deglaze everything with the broth and whisk everything thoroughly with a whisker. Add the sour cream, cream and milk and let it cook for about 10 minutes. Add the freshly grated horseradish and black pepper. Cook for another 5 minutes . Blend everything until smooth and homogeneous. Taste it, and if necessary season it with some more salt, pepper and more horseradish and blend it again. Serve immediately with the homemade croutons, a pinch of fresh horseradish and the diced parsley . Homemade Croutons Cut the bread slices into small pieces Melt the butter in a medium size pan. over medium high heat Add the bread pieces, salt and the diced garlic and fry everything until crispy and golden.
